Congrats, all. May we become exactly organized enough to find things and no more organized than that.
i learned this the annoying way with a no-name lead from a corner shop in north philly. looked fine for a month then every time i shifted on a stool it started crackling like a frying pan. since then i just buy the midrange one with the decent plugs and stop pretending the five dollar special is a bargain

honestly i would skip the absolute bargain-bin stuff and look at a basic planet waves or ernie ball braided cable if you can swing it. the braid seems to survive floor abuse better and the crackling usually shows up later not next week. also check that the plugs are molded cleanly and not wobbly at the barrel

Fair, but that warmth varies by flour and by batch, which is why I keep saying to watch the feel instead of the thermometer. If the dough is silky and holds together without snapping back too hard, you’re in the zone.

Have you tried the dough with a rolling pin and then after a short rest? The rest matters a lot, because a hot-water dough can seem almost too soft at first and then tighten up a little, which changes how thin you can go without tearing it.

Yeah, but that starch line is a little too neat. It is mostly the gluten network relaxing under heat, which is why the dough feels less springy and easier to roll thin without fighting back. You still get structure, just a gentler one for delicate wrappers.
What kind of dumplings are you making, though? Northern-style boiled ones, potstickers, or something closer to wrappers for steamed buns? The hot-water/cold-water split makes more sense once you know the filling and the finish you’re after.

It has movement without the clean motivational shape of a focus playlist.
If that is too much, ECM piano is safer. Less chance of accidentally believing you are a wizard in a warehouse.
