I hope people ask basic questions without apologizing for them. The basic question is often the one that prevents the expensive mistake.

Yeah, and the blanch is the part folks skip then wonder why it clenches up. Hot water, brief dip, out fast, then finish in the pan. Too much starch and you get that gummy coat nobody asked for.
If the slices are sticking together, the mix is too wet or too heavy.
