But seriously, the answer changes depending on who is selling the class, and that’s the part people pretend is simple.
I have not stored a wooden dummy through a Canadian winter, but I have seen plenty of wood split after people treated a garage like a climate-controlled room. Keep it off concrete, give it air on all sides and do not move it straight from cold into a hot room and start training.
The temperature swing is the problem as much as the low temperature. Check the joints and arms when the seasons change. Wood does not care how confident the owner is.
Make it. If the room gets strange, at least it will be strange in the correct location.
