I’d push back a little on Di Sarli before D’Arienzo if the goal is staying awake, because Di Sarli can turn into a velvet couch real fast. Great music, sure. But a long drive and a velvet couch is how you end up missing your exit, and that is not a romantic tragedy, just irritating.

I used D’Arienzo on a night transfer once, kept me from getting sleepy at 2 a.m.

Then look for clean transfers of D’Arienzo and Di Sarli, not the museum-grade misery. You can drive to those without feeling like you owe the neighbors a funeral.

And if you want one sharp edge in the mix, throw in Troilo later.

Bad remastering is its own little crime. Sometimes the old shellac is easier on the ears than the shiny digital mess.

Confirmed solution: I kept the dose fixed, went a little finer and extended the yield. The sour edge disappeared without changing three things at once. I am leaving the original numbers above intact so the next person can see what changed.

Same Bialetti Moka Express 3-cup and grinder here, different but similarly light coffee. Change: extend the bloom by 15 seconds. Why: this coffee may still be releasing enough gas to disturb the early extraction. Expected result: less bitterness in the last third of the cup. That should tell you whether the behaviour belongs to the setup rather than this exact bag.

Also in Spain, but my order was a few months ago, so treat this as older evidence. Shipping was fine and the coffee opened up after about two weeks. I would still want a newer report before subscribing.
