Yep, cumin does that if it never gets contact with hot fat first.
Wide and hot, yeah. That’s the part people skip because they want one less dish.
Do you let it sit covered after the baghar, or serve straight away? I’m wondering if the heat loss is just from the transfer or from people waiting around with their plates half ready. Do you ever preheat the serving dish too? Sounds fussy, but so does cold garlic.

Yeah, that makes sense. Big pan eats heat like a damn campfire, so the little things disappear if you dump it all at once. I’ve also seen people hold back the mustard seed and cumin till the end, seems to help a bit.
Keep the dummy steady and do not let the garage become a second weather system. I would check the wood, mount and arms before every session once the temperature starts moving around.
A training tool is not improved by forcing it to prove your toughness.

Great music, sure. But a long drive and a velvet couch is how you end up missing your exit, and that is not a romantic tragedy, just irritating.
