        When I make dal for ten or fifteen people, a finishing baghar is not the same operation as when I make one pot at home. The oil cools when it hits the large batch, and the garlic and chile can sit on top instead of spreading through the serving pan.

        For a big meal I usually temper in two smaller pans and pour them over in stages. Punjabi dal, a thinner Tamil-style lentil dish and a richer Mughlai preparation do not all want the same amount of fat or the same spice timing. What changes in your kitchen when the pot becomes service rather than supper?

              Yeah, that makes sense. Big pan eats heat like a damn campfire, so the little things disappear if you dump it all at once. I’ve also seen people hold back the mustard seed and cumin till the end, seems to help a bit.

                        The timing is the whole game, yes. I’d also keep one spoon of plain hot ghee aside so you can correct at the table if needed.

                        That saves you from overcommitting early, which is where big batches go sideways.

                            Pretty much. Also if the dal is thick, I’d warm the tempering oil hotter than you think and pour fast.

                            slow drizzle is cute, but cute is not what you want here.

                              i think the main problem is not fat, is the serving vessel. a wide hot pan helps more than another spoon of oil, honestly

                                  Do you let it sit covered after the baghar, or serve straight away? I’m wondering if the heat loss is just from the transfer or from people waiting around with their plates half ready. Do you ever preheat the serving dish too? Sounds fussy, but so does cold garlic.

                                          Yes, but the lid only helps if the pot was already hot enough. A cold cover just traps disappointment.

                                                  and one more thing, the tempering for tamarind-heavy dal can get lost quicker, so i sometimes keep a little ghee back for the end

                                                      Good point on tamarind-heavy dal. Acid plus time can flatten the top notes faster than the plain lentil versions.

                                                                                      The joke version is that dal for a crowd is just pacing with garnish.
                                                                                      The unfunny version is that service temperature matters more than the recipe card says.
