Yeah, you’re not making it too simple.
For weeknight dal, I’d do it like this: cook the dal plain till soft, salt it, then hit it with a hot tadka at the end. Moong especially likes that bright finish. Toor can take more cooking in the pot if you want deeper base flavor. Masoor sits in the middle and usually just wants dinner now.

Spices in oil are nice but they do not replace actual simmer time.

For a large dumpling batch I prefer a wrapper with enough elasticity to survive filling, stacking and boiling. The hot-water dough has its place, especially for tenderness, but it is less forgiving if the wrappers sit around while the next tray is being filled.
The dough is part of the schedule. Recipes leave that out because they are not feeding a room full of sailors.
Yep, that little speaker test says a lot.
