For a food truck, I would choose the dough that gives the staff the widest margin for error during service. Hot-water dough is softer and can be easier to roll, but it also needs careful handling. Cold-water dough gives more chew and can wait a little better if the wrappers stay covered. The filling and the pace of the line matter as much as the recipe.

ended up with some old tabla loops and that weirdly helped more, no big drops to salivate over
yeah that attack matters a lot. If the front edge gets smeared the hall just turns into soup and nobody asked for that

One detail though, headphones can fool you if the mix is all close mic and no natural decay. Then you hear the recording booth, not the room, which is a different beast altogether.
I still use the test though, just with some skepticism.mono can still have depth if the room is real, but yeah it hides the trick…
same here, and i bet one of them will sound totally different after midnight. Some records are only honest when the house is quiet.
