        I can fold a simple half-moon dumpling, but the pleated ones become different creatures depending on how wet the filling is and how long the wrapper has been sitting. The recipe usually treats folding as decoration. It is really a way of controlling how much filling the seam can hold and how the dumpling sits in the pan.

        For boiled dumplings, which folds are forgiving when the dough is slightly dry? For potstickers, do you prefer a flat seam or a taller pleat so the bottom has room to brown? I am happy to practice, but I would like to know what the fold is doing before I blame my hands.

          You are thinking about it the right way, I believe. A slightly drier dough usually likes a simpler fold, because the seam is already asking for help; for boiled dumplings I would rather make a clean half-moon with a well-pressed edge than a fancy little crown.

                That is the practical part people skip. A decorative fold is not just ornament; it changes the thickness at the rim and therefore the cook time at the edge, which is where splits begin.

                                A flat seam is often enough for potstickers if the bottom contact is good.
                                The taller pleat can be useful, but only if the wrapper is supple and the filling not too wet.

                                Yes, and there is no shame in keeping it simple if the structure is sound. A good dumpling does not need a parade float of pleats.

                                  Yes, but I would call that thickness at the rim, not a fold making the edge cook faster. The fold matters chiefly because it creates a stronger seal and, in the pan, a little more roof for steam.

                                      Also, with a drier wrapper, too many pleats can turn into tiny cracks, not pretty ruffles.
                                      I usually stop at three or four and pinch the rest like I mean it.

                                              I do not think it is personality so much as surface area. More folds mean more places for the seal to fail if the dough is dry, and that is before the pan gets any ideas.

                                                    Freehand is better. A mold can hide a weak pinch and then the weakness appears in the pan.

                                                    My mother made boiled dumplings with little half-moon crimps, never the fancy restaurant pleats, and they held fine so long as she did not overfill them. She would say the wrapper tells you when it is getting stubborn, which is a very kitchen sort of warning.

                                                          Thank you, that is kind. I think the trouble is that everyone shows the pretty finished dumpling and not the twenty imperfect ones before it; the kitchen work gets hidden like a good footnote.

                                                                I think the real enemy is haste. Even a plain fold behaves better if the filling is cool and the wrapper has not spent the afternoon drying out like old library paste.
