Grinder, burr and calibration: Comandante C40 MK4; Nitro Blade; 24 clicks
Bean, roaster, process and roast date: Ethiopia Worka Chelbesa; Onyx Coffee Lab; washed; roast date 2026-08-04
Dose and water mass: 20.0 g coffee; 340 g water
Temperature and water profile: 96°C; Lotus-style remineralized distilled water, moderate hardness / low alkalinity
Pour/agitation schedule: 60 g bloom for 45 s, then two even pours to 340 g; one gentle swirl
Drawdown time: 3:20
Expected and perceived flavour: expected caramel and stone fruit; perceived cup is sweet but slightly muddy
Changes already tested: changed grind one step coarser; kept everything else fixedThis started with one good bag and has become a small research project. I care about roast freshness, consistency and whether the coffees are easy to dial in on ordinary filter gear. Reports from United States are especially useful.

Recent United States report: my last order arrived within the normal window for domestic/import delivery and the roast date was recent enough that I still rested it before brewing. The useful part was consistency across two bags, not one spectacular cup.

Also in United States, but my order was a few months ago, so treat this as older evidence. Shipping was fine and the coffee opened up after about two weeks. i’d still want a newer report before subscribing.

Foreign and older report, so this belongs lower in the pile. The coffee itself was excellent, but transit changed the resting window enough that my recipe notes are probably not portable to your order.
