I sort of disagree on the background-music bit. Fairuz can absolutely work that way for me, but only because the song is already so full of…
Have you heard anything by Ziad Rahbani, or is that too obvious? I always think he’s good for this sort of thing because the tune can sound breezy and then the harmonies start doing weird little side-eyes.
that’s a really nice way of putting it, honestly. like the song is smiling but not because everything’s fine, which is a much better trick than just sounding sad and calling it depth
Cucumber is a good stage for it, honestly. Nothing much to hide the effect.
That sounds right to me. I think the pan does eat it up if you give it too long, which is rude of the pan.
That pan has seen things.
do they hold if you keep reopening them, though?
that’s the bit that usually exposes the…
ha, exactly. the packaging has a great sense of confidence for something that gives up on week two.
some of these bits are basically optimism in a bag.
yeah, that’s the important bit. if the latch is the weak point, no amount of wishing makes it better.
might as well spend the extra few quid on the sturdier version.
Spice jars are surprisingly good at aging into disappointment.
we had something similar in the library office, cables behind a shared desk and all that. the velcro wraps were the only things that didn’t snap or go slippery after a bit of use.
ugly, but dependable, which is more than i can say for half the hardware…
yeah, that’s the version i’d recommend too. the metal tab ones are a decent middle ground if you want it tidier than velcro but not precious.
I think one small correction is that freshness affects the fragrance more than the numbing itself, at least from what I’ve tried. The tingle can hang on when the smell is half gone. But once the peppercorns are really old, the whole thing gets muddy and not worth the cupboard space.
Might be worth buying a tiny bag and seeing the difference side by side.
If it’s been in the cupboard a while, crush a few and smell them before anything else. If the citrus note is gone, I’d replace it rather than trying to rescue the whole jar. Bit grim, but better than blaming the recipe.
if they stay put, i’d say keep them a bit looser than you think. mine slipped less once i stopped cranking them down like i was trying to secure a canoe.
