yeah, that’s the version i’d recommend too. the metal tab ones are a decent middle ground if you want it tidier than velcro but not precious.
I think one small correction is that freshness affects the fragrance more than the numbing itself, at least from what I’ve tried. The tingle can hang on when the smell is half gone. But once the peppercorns are really old, the whole thing gets muddy and not worth the cupboard space.
Might be worth buying a tiny bag and seeing the difference side by side.
If it’s been in the cupboard a while, crush a few and smell them before anything else. If the citrus note is gone, I’d replace it rather than trying to rescue the whole jar. Bit grim, but better than blaming the recipe.
if they stay put, i’d say keep them a bit looser than you think. mine slipped less once i stopped cranking them down like i was trying to secure a canoe.
For mapo tofu I’d use it as the finish, not the base. A little oil, maybe, then the pepper at the end so it stays bright. If your jar’s old, try grinding a pinch first before you commit to the whole dish.
