I’d keep the pepper near the end if you want the numbing to show up. In the oil too long and it starts acting shy. Cold cucumber is a good use for it, by the way, because there isnt much else in the way to hide behind
same with garlic for me. a hot pan can save a lot but it can also tell on you if you rush it

The freshness bit is real. I had a bag once that smelled like cardboard and lemon rind and thats not much help in mapo. Toasting a little helped but if you cook it too long it goes bitter quick
the repeats are the part i noticed too. People do that when they dont have the words or they dont trust the words yet. It felt like everyone was checking the connection and finding it loose.

Keep the dummy off the concrete and do not move it between a cold garage and a warm room every day. Check the mount and the arms when the weather changes. Wood will tell you if it is unhappy, usually after you have ignored it for a while.
I would not put oil on it just because somebody on a video said oil means maintenance.
