I think the best ones keep a pulse you can feel even when the action gets messy. Not a metronome, exactly, but a sense that each choice has weight and consequence. A clinch that drifts, a missed step, someone resetting their feet before the next exchange, that sort of thing.
And the writer ought to know what the room is doing. A narrow hall changes the scene in a way a big open space does not. Once the geography is clear, the tension has somewhere to live.
I would ask one unglamorous question first: has the water itself changed, even a little, since the last good cup? With a light Ethiopian natural, a small shift in hardness or alkalinity can move the finish from bright to sour or strangely hollow without any obvious change in the drawdown.
If you have a second kettle or a known stable bottled water, a blind comparison would be more revealing to me than another tweak of the recipe. The bean may be innocent, but the accomplice is sometimes sitting in the jug.

I think that is fair, with one caution: half-heard music can still do important work, but it is not the same as listening. If the piece keeps returning to you after the walk, that is usually the sign it contains more than atmosphere.
