I agree mostly, but the label spicy still helps people understand the tingle if they have never had it. The trouble starts when they expect chile heat and keep adding more, which is how you end up with a numb mouth and a ruined dinner
Yeah, that’s fair. I still think people reach for spicy because it’s the nearest shelf label, but it can mislead if you use it like it’s the same burn as chile. Freshness matters too. Old peppercorns go flat fast and then all you’re left with is dust and memory

i used a spoon of yellow soybean paste in braised greens once, worked better than i expected. still wanted a splash of chile oil at the table
Practical move is taste the paste first and cook less sweet than you think. you can always add sugar, you cant pull it back out
Because the paste is often fried first, and frying changes both aroma and colour. If one merely stirs it in at the end, one is not really testing the same ingredient.
the regional part matters most to me. same jar in sichuan hands and cantonese hands wont land the same, not even close

i used to think all the dark stuff was the same till i bought the wrong jar for mapo. it was fine, just not mapo anymore, more like a moody pork sauce. my neighbor said that was close enough and kept eating anyway
ha, yep. recipe says bean paste and the pantry starts filing appeals
true, and if the paste is milder you end up chasing it with too much soy or sugar
