      I agree with the body-horror part, but for me the book never stops feeling…

        yeah, and that’s the part that gets me too. Folks want the neat explanation, but the book keeps tripping over the mess on purpose, like a chair leg in the dark. It’s rude in the best way.
        Also, if anybody says they read it once and “got” Rufus, I don’t trust them much, ha.

          I would push back a little on that. What changed for me was less about the big historical argument and more about how often Dana has to make split-second choices that are just plain survival.

          The book kept feeling like a pressure cooker instead of a lesson, and that’s what stuck.

            Five minutes is enough to soften onions and take off the raw edge. It is not enough for the deep brown flavor in most pots I have used.

            If I am making dal after work, I either start the onions first and leave them alone or accept that the color will be lighter. The recipe writer needs to say which result they mean. “Brown” covers too much ground.
