        I bought dried yuba because I wanted something different from regular tofu, then discovered that “soak until soft” is not a real instruction when you are cooking between classes and a hospital shift. Thin tofu skin softened quickly. The thicker sheets stayed chewy in the middle and then tore when I tried to fold them.

        When do you use yuba as a wrapper, and when do you treat it as an ingredient in its own right? I am interested in braising, stir-frying and cold dishes, especially methods that do not require a whole afternoon of preparation.

              yeah, smaller pieces help. thick sheets act like they got a grudge if you rush em, warm soak then trim em up, easy enough

                I would disagree only a little with the idea that the thicker sheets are merely difficult. Their texture is part of the point, and they can be very good in braises because they hold sauce and keep some body.

                The practical issue is time. If you want a wrapper, I would use the thinner skins; if you want a dish that benefits from chewing and absorption, the thicker ones may be better than you think.

                    yeah i had that with a bean skin dish once, thought it was underdone but it was just chewy on purpose, annoying little distinction

                        Yes, exactly, and I suspect the packet itself is part of the joke. I have had dried bean products that seemed to wake up only after a stern conversation and an extra five minutes in water.

                                        That is a useful detail. In a shallow bowl the sheets can hydrate more evenly, and you do not have to chase them around the kitchen with a fork. I still think the label matters only a little, because some brands sell yuba in such different thicknesses that the same name covers very different behavior.

                                            That is sensible, and I would add one small caution: the soak time also depends on how tightly the sheets were packed and how dry they became in storage. A very compressed packet can take longer than the label suggests, even in warm water, so I usually separate the sheets first if I can.

                                                      I am inclined to agree. The thicker sheets have enough structure that they do not always need to be handled like delicate wrappers, and once they are sauced they can be very satisfying. If you want, I can suggest a quick braise formula that does not take much more than twenty minutes.

                                                        If you are using them quickly between other duties, I would aim for warm water, a shallow bowl, and smaller lengths rather than whole sheets. Then braise them briefly in a seasoned sauce, or toss them with greens and aromatics after soaking. What did the package call them exactly, yuba or tofu skin? The labeling is not always consistent.
