Bean, roaster, process and roast date: Ethiopia Chelbesa; Tim Wendelboe; washed; roast date 2026-06-15
Dose and water mass: 16.0 g coffee; 267 g water
Temperature and water profile: 92°C; Brita-filtered tap water, about 110 ppm TDS
Pour/agitation schedule: single continuous main pour after a 45 s bloom; one small excavation with spoon only if dry pockets remain
Drawdown time: 2:35
Expected and perceived flavour: expected floral sweetness and clear acidity; perceived cup is flatter and drier than expected
Changes already tested: reduced agitation; kept dose, water and temperature fixedI ran this as a small controlled test because my memory is apparently very confident and very bad. Everything except the variable in the title stayed fixed. The difference was larger than I expected.

I am less convinced by the flavour claim than the workflow claim, but that may be because my water is different

That tracks with my experience. The useful part is that you wrote down what stayed fixed, so somebody else can actually test it.

I would keep the current recipe for another two brews before changing anything. One good cup can be luck; three similar cups is information.
