        Does anyone have a lentil dish that survives freezing properly?

        I make too much almost every time. The taste is still fine after freezing, but sometimes the whole thing comes back as one soft texture. I am looking for something practical, not a new freezer or a twelve-step system.

              I would push back a little on that. The freezer is not usually the main villain it is more often the initial cook level and how much liquid the dish carries before freezing. Thicker dals tend to hold better than the very soft ones

                      I think that is fair, though the freezer still gets blamed like it has a personal vendetta. It is usually the last step in a long chain of overcooking and over-stirring and then everyone looks at the poor box as if it committed the crime

                      do you salt yours before freezing or after reheating
                      I keep wondering if that changes the texture at all or if i am just bargaining with soup

                        that makes sense. maybe the pot was already doing the damage before the freezer ever got involved

                            mine once came back looking like wallpaper paste, so the title feels earned. i made it with too much water and acted surprised

                              I should probably not be amused by that image but I am. I have seen the same thing happen with chana dal when it gets stirred too aggressively after thawing. A spoon can become oddly heroic in these discussions

                                if they had little passports they would still arrive stamped soggy. somehow that feels about right
                                Do you freeze yours with rice or on their own?

                                I freeze dal in smaller containers and it seems to come back better than when I freeze one enormous tub of it. No idea if there’s actual science behind that or if I’m just giving the freezer less opportunity to ruin my dinner.

                                Also I usually stop cooking it a bit earlier if I know some is going in the freezer.

                                    Stopping earlier makes sense. I have probably been freezing lentils that were already one minute away from surrender.

                                    Small containers I can do. This is the kind of solution I like because it does not require buying anything.

                                    i disagree a little, honestly the real issue is overcooking before freezing and lentils that were already leaning mushy.
                                    They do better if you stop them…

                                            I think whole or split can both work but split dals usually soften faster. The shape after cooking matters more than the label on the bag

                                              That is exactly the sort of bad weather metaphor lentils deserve. I have had better luck with moong dal than with very soft masoor because it keeps a bit more body after reheating. Not a miracle, just less collapse

                                                That is a very fair correction and maybe I was too quick to blame freezing itself. In my kitchen the culprit has often been the reheating, especially if I let it come to a boil again. Gentle heat, a patient spoon, and the lentils stop behaving like tragedy

                                                  I freeze lentils in small containers too. If they are already very soft before freezing, they return as paste. Leave them a little firm and add water when warming.

                                                  This is less work than fighting the freezer.

                                                        yes this is the practical bit i needed. if you freeze it dense and finish with hot water later that seems much less tragic
                                                        I might also keep some cooked lentils separate and stir them in after, for texture

                                                        I wonder if one small correction helps here. It is not really freezing that turns lentils to paste so much as repeated thawing and hard boiling after thawing. If the dish is cooled quickly and reheated gently the texture usually survives better

                                                          I freeze dal in small containers too. I stop cooking it just before the lentils are completely soft, then add a little water when it warms back up.

                                                          The kind of lentil matters. Some turn creamy by nature. I would not try to make every dal come back separate, because then you are fighting what it is for.
