September 2, 2026 at 8:19 am #4994Brewer and filter: Clever Dripper large; Melitta #4 paper
Grinder, burr and calibration: Fellow Ode Gen 2; Gen 2 flat burrs; 5.1; chirp point checked
Bean, roaster, process and roast date: Ethiopia Chelbesa; Tim Wendelboe; washed; roast date 2026-08-06
Dose and water mass: 16.0 g coffee; 267 g water
Temperature and water profile: 92°C; Brita-filtered tap water, about 110 ppm TDS
Pour/agitation schedule: 56 g bloom for 40 s, then three pours; no stirring after bloom
Drawdown time: 2:35
Expected and perceived flavour: expected caramel and stone fruit; perceived cup is sweet but slightly muddy
Changes already tested: tested one brew with remineralized water while keeping the recipe fixedI ran this as a small controlled test because my memory is apparently very confident and very bad. Everything except the variable in the title stayed fixed. The difference was larger than I expected.

The cleanup detail matters more than reviews admit. A tool used every day gets judged in the sink as much as in the cup.
