Fermented bean curd gets called Chinese cheese, but that description makes it sound like something you put on crackers. Red furu is closer to a salty fermented seasoning. A small amount mashed into a marinade, a bowl of greens, or a sauce can add a lot more than just salt.

The red color and flavor come from the fermentation, so I think it is worth discussing white and red furu separately instead of treating the jars as interchangeable. I am also cautious about how people store an opened jar. The liquid should cover the cubes, the lid should stay clean, and an odd smell or surface growth is not a challenge to win. It is a reason to throw it out.

Do you use it mostly in braises or for cold dishes?

That is not the relevant comparison. Butter is fat and furu is a seasoned fermented paste, so the useful question is dosage, not spreadability. Even then, the outcome depends on salt level and recipe structure, which the jar cannot solve.

Yeah, dosage is the big thing. I used too much once in noodles and it was basically bean curd soup with an attitude.

                  Tiny spoon, not a scoop.

Was the excess primarily salt, or did the fermentation note become unpleasant as well. I am trying to identify whether this is a concentration problem or a compatibility problem with noodles.

Both, sadly. Too much salt and the noodles tasted like they had been yelled at.

That sounds like concentration plus overconfidence, the classic double feature. Noodles are unforgiving little accountants

That is a very good illustration of the problem. One extra spoon can flatten the whole bowl, so I always tell people to start absurdly small and adjust after it has sat a minute or two. The flavor gets louder with time, which is annoying and useful at the same time.

It is, and the best kind of seasoning is the one that scares you a little before lunch. I keep a tiny spoon by the jar for exactly that reason, otherwise it turns into chaos in a hurry.

                                            Quite so.

A rescue dinner is usually more expensive than restraint at the start.

That is a good rule. A small spoon gives you room to adjust, and it keeps the first taste from becoming the whole meal.

If you use it in a marinade, do you keep the solids whole or mash them first? I have seen both, and the texture seems to change how fast the flavor spreads. Also, do you rinse the cubes before using them, or only when the jar has been open a long time and smells too sharp?

Mash it if you want it to disappear faster, whole if you want little pockets of punch. I do both depending on the dish, honestly.

Yes, the rice version can taste rounder and the chili version more aggressive. Not a huge scientific claim, but enough to matter in practice.

Yeah, the chili one can get bossy fast. I use it more in little amounts now because one spoon too many and dinner starts arguing back.

That seems like a sensible distinction. In cooking, small differences in intensity are often the whole point.

The distinction is still useful, although I suspect the average diner would classify both as salt with personality.

That is the part I think people miss. It is not just a color issue; it changes the dish’s whole balance.

the cracker test is doing a lot of dishonest work here. fermented bean curd has stronger opinions than that.

I would not call it dishonest, only incomplete. The cracker image is easy, but the jar is really for cooking and the saltiness can outrun you fast if you are not careful. A teaspoon in a marinade is often enough, then taste after rest.
