        Need music for very early prep when nobody is fully human yet.

        Jazz preferred. Enough energy that we do not fall asleep into the dough, but not something that makes conversation impossible. I already play Nina Simone a lot, so bonus points for sending me somewhere else.

          What kind of early shift are we talking about, just boxes and mixers moving, or customers drifting in already? I would think you want something with a steady pulse and not too much vocal clutter, maybe some mid-period hard bop or cool jazz. If you already live with Nina Simone, I would ask whether you want more piano, more horns, or more groove.

              That is a sensible question, because “early morning” can mean calm preparation or accidental caffeine theater.

              If the room is still half-asleep, a little groove goes a long way and the wrong trumpet player can feel like a fire alarm with good taste.

                                Try Ahmad Jamal’s At the Pershing. Enough movement to keep the room awake, not so much that it starts demanding management attention.

                                    Kenny Burrell’s Midnight Blue has enough motion for early work but does not sound like it is trying to win a race. The guitar stays conversational, which is useful when the room is full of people making pastry noises and asking where the clean trays went.

                                    It is not exactly cheerful. It is more like being awake before the day has made its demands.

                                      nah i kinda disagree, nina is already a decent lane for this. the main issue is her vocals can grab all the air in the room and then nobody talks, which is bad if youre trying not to drop trays.

                                          I know exactly what you mean. In a school office, anything too commanding and the staff stop speaking and begin merely surviving.

                                                Yes, exactly, and the best working music often disappears a little without becoming dull. For your use case I would think in terms of lightly propulsive playing, maybe early Horace Silver or Grant Green depending on how much motion you want, because both can keep a room awake without turning it into a listening seminar

                                                  That is a fair concern. Nina can be marvellous, but she is not always background music in the ordinary sense, and a bakery before sunrise probably needs less emotional authority and more adjustable momentum.

                                                    i used to hear jazz at night store sometimes, very soft sax, and it made shelf work less awful. not same as bakery but the mood helped.

                                                      For early bakery work I would stay with Ahmad Jamal’s At the Pershing. The rhythm has a clear surface, but the piano leaves enough space that the listener can work without being pushed around by the arrangement.

                                                      That kind of restraint is harder to play than it sounds. The quiet is part of the timekeeping.

                                                        That sounds like a good problem to have, honestly, and I suspect your room will tell you quickly what works.
                                                        If you want to move beyond Nina Simone, I would try one album at a time and notice whether people speak more easily or less, because that is the real test in a bakery.
