I keep seeing advice to clean a cutting board with half a lemon and salt. This may remove smell, but it is not the same as cleaning it properly after raw meat.

What simple routine do people actually use at home? I am interested in the ordinary method, not a product with a subscription and six special settings.

i have done this, then washed it anyway, which seems the sensible order.

Yes, that is the bit people skip, and then they call it a method.

The lemon and salt may help with odour, but soap and hot water after the meat is the actual cleaning step.

Exactly, the lemon is theatre, and soap gets the billing.

the lemon gets a little romance, soap gets the labor, as usual.

                    poor soap, always on shift

soap is the responsible adult here, i think. lemon is just visiting

i mean, the lemon part is mostly for the smell. not the germs really, which is…

Quite so. And with raw poultry especially, smell is the wrong standard altogether.

A board can smell fine and still need proper washing, which is not very glamorous but there we are. Have you had a chance to read the whole advice people keep repeating, or only the lemon bit?

A damp board is just an invitation to other problems. Let it breathe a bit.

Do you mean on a wood board or plastic one?

The answer changes a little, and I am curious which you are using.

depends, i suppose. one board is a stage prop, the other a witness

I agree with you, though I would add one small caution: on wood, do not leave it soaking.

Wash promptly, dry it well, and if it is a raw-meat board, sanitise when needed.

That is the ordinary routine, really
wash, rinse, dry, and do not rely on scent as…

my aunt used to say if it smells like lemon it must be clean which is… cheerful thinking. our kitchen had a permanently suspicious cutting board and somehow survived

Yes, that matches the plain household approach.
A brief wash with soap after use beats any citrus ritual, though on a very old board you may still need more care.

If you want, I can lay out the boring version in one line.

It is less charming than lemon, but rather more trustworthy.
